The more I looked at the side plates I have made the more I realised that the bends in the plate were more like waves than a crisp angular line. I looked around for a suitable bender and in the end decide to make one from box section, 8mm bar and some M12 threaded bar. The plate sits in the gap, supported on on side by two 8mm bars and the other side by a single 8mm bar. As you tighten the nuts the single 8mm pushes the plate down between the two bars on the other side and creates a neat bend.

For once something worked much better than I imagined, very little torque needs to be applied to the nuts and the crease is very clean. 10/10 I would say.
